The same way a human being can generate a massive amount of light strong enough to ACTUALLY damage someone enough to kill and yet not burn herself alive in the process, magic.
She can parry anything.

She can parry being lit on fire, a huge tidal wave, a magical nuke, an actual giant bomb, an unstoppable rock guardian hurtling towards her at mach 3, a large sound wave, being cursed by an undead (?) metal man, a molten fireball, a giant crystal ice arrow, being entombed in a glacier, being savagely attacked by a werewolf, being devoured by a hungry toothy monster.... so yes, she can parry a laser.
I'm pretty sure the only thing she can't parry is Fiddlesticks' Crowstorm. (and even then I wouldn't be surprised if she did)
