Good Mid Champs to Blind Pick

I mostly play mid, and due to bad luck or what have you, I feel like a lot of the time lately the enemy mid laner hasn't had their turn to pick by the time mine comes around. I'm looking for some good champions to pick in this situation. My go to is usually Lux because her range can usually at least let me farm fairly safely, but I've been having trouble with people taking Ekko in response, as he seems popular right now. Sometimes I'll go Diana since she doesn't have that many hard counters and other people play her so rarely that most people don't seem to know what to do against her. Does anyone else have any good recommendations on mid laners to play when you don't know who you'll be laning against?
