what is the best 'you're never going to kill me' armour build

It really depends on who you are playing. If you are armor stacking on Illaoi (who you mentioned enjoying), I'd probably recommend something along the following lines:

Well, you're never going to kill me builds right now feel like "haha I can survive 2 seconds and a half in teamfights with a full tank build". Cause you know, 
are ridiculously too strong; and is an option.

Mundo with sunfire spirit and mogs-- so standard build. Meaning nothing short of your nexus will stop me from killing you.
Whimsy + Boots of Mobility
Guardian angel. Randuin's omen. Sterak's gage if you have a lot of health.
GA, 4 waemog, Sterakes gage.
mercurial sabre. plus your DMP + Mogs. add ghostblade and nothing should be able to lock you down or touch your bum...too violently.
