People really can't seem to juke those grabs, and it's hard to carry as a support like Soraka (understandably) whom I main. Any advice?

If he is picked before you, get a counterpick in. Otherwise just do what you'd do in a normal game, rely on your ADC to actually play well. If it doesn't happen, maybe try to make sure the cs wave doesn't get wasted in the turret.
I don't really know. It isn't like you can always save him. You can throw your silence on them to help him get out some.
Tell your support to play alistar into blitz. Knockup -> headbutt into ADC auto range. Basically it hurts the blitz more to hook the Ali than it does for him to just hold the skill.
Roam. Make plays elsewhere to snowball your other lanes so it's not reliant on your ADC.
