Just went against an 
jungle, though she isn't picked often she is still difficult on how to properly play against and she did fairly well.
Since Season 7 no longer has Pink Wards (which was the only counter play I knew). Any advise on what else I can do?

Pretty sure this trick still works. Control wards still reveal eveylnn.
Warding her camps is also a good way to know where she is.
Gank her at one of her camps at level 2.
You can use normal wards near her camps since if she's in combat she'll be out of stealth, and control wards still reveal Evelynn since she's considered camouflage.
Yo, freezing the lane is the best way sometimes, it is hard to do, but eve cant gank a lane frozen at towers edge, :DDDDDDDDDDDDD
