Professionals don't have to use the champion select implemented this year?

I was watching Worlds VODs (I have not kept up with the pro scene this year) and realized that they are still using the 2015 champion select. They have 2 people picking their champions at the same time. How come they get to use the old system while the entire playerbase is still punished by the new system. I found the old system to be much faster in terms of select to in game, have less dodge occurrences, and have more time per player to select their champion due to not having to lock in everything (picks and bans). Can we have old select back?

They are using custom matches, they don't need to go into matchmaking to search for players...

Theres not really a point in using it.

The only difference is that they can pick 2 people at once instead of waiting for the consecutive picks. Since they know what champs they want to consider, this doesn't change anything.
