How do you counter 2 mid laners bot?

This whole idea of nobody wanting to play support is getting out of hand as of recently. I’m pretty new to LoL and I’m really liking my experience so far. I am enjoying playing ADC the most except when the other team picks two mid laners to go in bottom lane. My girlfriend usually supports me with Janna, Karma, Nami, Lulu, etc. but we always struggle so much when we go against 2 mid laners in the bottom lane or just absolutely random players. For example, we went against an Olaf, and a Garen in the bottom lane. Like how the hell do we counter that? Another tough matchup that just seemed to be pointless to play was Xerath and Brand. They have so much range it seems impossible to even get a poke in. Sometimes we get lucky going against an ADC but they are usually supported by someone like Xerath with extreme range and damage. I’m just lost on how we counter all these tanks and mid laners that go bot when we are both squishy champions.
