Breaking the Meta

Ok so we have this meta, tank top, mage mid, adc and supp bot and a fighter in jung, easy enough to understand, but then people choose champs that just crush the generally used roles in a lane, for example i just played a game where the enemy threw Ekko and Yi in bot lane and they crushed us... melee rushdown champs just simply out damage early game so how do you counter when people basically counter pick the entire role that is usually used in that lane.
