Aha! A subject I am good at! https://na.op.gg/summoner/userName=Sp33d%20Zer0 I play almost exclusively late game hyper carries, and I have to say that they all feel pretty on par with each other. There are some notable ones that get a lot of notoriety, like Vayne for example, but I think there are much better hyper carries than her. It really depends on the situation.
If I see a LOT of squishies on the enemy team for example,
is an amazing pick because he can come out of stealth with ult and blow away an entire team in 3 autos (except for tanks and some bruisers). He also statistically is the highest winning ADC from 25 minutes onward at every phase.
If I see a decent number of tanky targets and have some good peel, I think
is the best because of his high range with W, double % hp on hit with bork and W, passive Q attack speed increase, and his abuse of guinsoo + runaans. Slap a frozen mallet on for some tankiness because those three are all the damage you will ever need, and go to town kiting and shredding everyone in the game, even squishies get wrecked by a 6 stack guinsoo kog in a couple autos.
If you have no ability to depend on your team for peel,
is my go to. She is very safe and while she is not the safest ADC, she is the safest hyper carry in my opinion. Getting to level 13 is huge for her as you can set down a trap line across an entire lane and deny an enemy push, you can trap jungle chokes to be safer, someone jumps on you and you have your E to get away. She is getting nerfed soon though, so it will be hard to say how good her teamfight will be after the changes.
If you don't need to worry too much about peel, and just need to keep your distance,
is life. High range, resets giving you 2.5 attack speed easy, aoe crit rockets, easy orb walking with minigun, a cross map ult that once you're good with can single-handedly snowball you into a win, and some minor peel makes her a nightmare at 3+ items.
feels a little weak in my opinion right now, but if tuned better, would be my go to for dealing with a multiple diver comp. Her w and ult give her a lot of safety from them.
is my pick against any assassin heavy team comp. See a vi ult? Use your ult and luagh as hers is on CD. See a zed ult? Ult and laugh as he doesn't even get to apply his death mark and still have it go on cooldown. Khazix jumping on your face? Little bit tougher, but you can still ult and pull your feathers to root him if he doesn't manage to outplay you on it, in which case, he is a dead bug.

But i'd say your best bet is learning somebody like Twitch. He's very strong rn. However don't be surprised if he does end up getting nerfed in a patch or two.
vayne and draven in my opinion .. if you master draven you wont need to play late game .. you gonna finish a game within 20 minutes
