Which champ out of these three are better in each category and overall which is stronger out of the three?

-Better Ganks -Better counter jungle -Better engage -Which is easier to climb rank with -Mechanics easy or hard

All will likely get nerfed in the near future. If you want to climb, pick a sleeper champ and learn its mechanics in and out.

Eve is a good example - just under the radar but still disgustingly strong.

Lee is very good at ganking with his 2 dashes, and that becomes a lot stronger at level 6, when he can kick the opponent back into his laner. He's an early game powerhouse who thrives in a team that is ready for his gank-heavy playstyle and can crush anyone who is unprepared. However, when it comes to farming and counterjungling, he's average at best. The bulk of his gold in the early game is going to come from ganking and taxing, and if he doesn't do that, he'll fall sorely behind with how slow his clear is. Add into that that the slow clear means that he's just as awful at farming the enemy's jungle as he is at farming his own, and he'll be pretty weak. As for teamfight engage, a good Lee Sin Insec combo is incredibly good engage, but it puts you into a bad position if you're not building tanky and is incredibly easy to mess up. Lee Sin is overall a pretty tough champion to do the job right with, however, if you can do it well, he'll give you probably the easiest time climbing out of the three. As for win rate, he's sitting at 49.9% right now, probably being lowered by all the people who have no idea what they're doing playing him. Overall, Lee Sin is the most difficult of the 3 by far and does teamfighting and ganking well, but falls short in farming and engaging the teamfights himself if you can't play it perfectly.

Vi is a much more general practitioner. She has strong ganks, though not as strong as Lee Sin's. However, ganking with her ultimate pretty much guarantees a kill. As for farming, she is again pretty good. Her E and Q being able to hit multiple minions in the AoE camps and her W giving her a 3-hit passive for armor shred means that she can be stronger than Lee Sin at farming and counterjungling, but still not super great at either. She's basically a much easier to play Lee Sin, but with better farming and not as amazing ganks pre-6. Her engage with her ultimate in teamfights is absurdly good if you hit the right target. Her ult is targeted and can't be stopped, so it's basically the bane of any hypercarry's existence, and that's the META down in bot lane right now. With people like Twitch and Vayne dominating the bot lane, Vi becomes a lot stronger with her being able to obliterate them in teamfights with insane burst while also making them useless and preventing an escape with her CC. She's the #2 jungler in the game right now, with #1 being Shaco. She has easily the highest win rate of the 3 at 54.4%, though.

Rengar easily has the best clear and counterjungle of the 3, however, he has to have his ultimate in order to gank. His pre-6 farming and counterjungling is incredibly strong, easily the best of the 3, and if he can find the enemy in their jungle, he can probably kill them. How squishy he is means that, if he tries to be the first to engage, he's likely just going to get killed. Go in on the enemy ADC and go in while the enemy team is distracted with your team and you should be able to burst them down quickly, however, when it comes to general gameplay and teamfighting, Vi just wins. He also only has a 47% win rate, the lowest of the 3. Overall, his burst is strong and he can make an ADC's life a living hell if he gets fed, but if he doesn't he'll be just about as useless as Urgot. Scratch that, he'll be even more useless because he doesn't have any poke.
