Amount of damage shielded should be considered in end game stats.
Amount of damage blocked by a shield is just as effective as healing the damage dealt and health healed is displayed at the end and I assume contributes to your points gained. I'm not sure how to best handle multiple shields whether it would be first shield goes first or if each shield should be reduced equally until they all are overcome. Honestly I do not care how they handle it but I think this would be another way to help supports who do not have heals to feel better about themselves for doing a good job shielding.
