Help on learning how to build

Hi, I've been playing LoL for about, I'll say 9 months (on and off). I just hit level 30 and have only used builds that i'v found online. I don't really know how to "build" a Champ based on the situation. Like, I understand that fact that if someone is AP build AP resist but give your champ what they need. But what I don't understand is the fact of what items I should use. If someone could give me a nice answer that'd be great! Thanks and hopefully I could get some help.

You can usually do fine with cookie-cutter builds; I generally look on champion.gg or op.gg to figure out what's core on a champion. You can switch up build order a bit depending on what you need, but generally the items the site recommends are pretty good/what your champion wants.

Guides and stuff can factor in a lot of things. They can recommend items for matchups, how skilled you are, and do a great number of things to start you out on the right foot.

The one thing they can't take into consideration is your play style. Many champions have multiple viable build paths you can take which fully depend on how you want to play the champion. The only way to properly account for this is to learn it yourself, or have someone spend a whole lot of time watching you play. I personally recommend the former.

Even if you don't use them try setting up some custom item pages for yourself. Put a bunch of items into categories like Magic Resist, Armor, Health, Damage, and anything else you find fitting. Place anything in there you think might be a good item, and as you play test them out. If you don't like how certain items worked remove them from the list, and keep going until you have a fairly reliable set of items that you like using. Once that's done just go with whatever feels right for the situation. You're training your intuition here, not making a spreadsheet.

champions all basically have 2 core items - Items they need or that work really well on them. Usually these can be found in champion guides (use lolpro) or recommended items in shop. 3rd item is usually situational item. I'll be honest the shopkeep recommended is usually pretty accurate.
