From someone who watches borderline everything of major regions, I watch LCS primarily because it's my region base. But if I had to compare, I watch:

LMS for its underdog values. It's pretty generic as there's no english cast. Similar to the LJL and LCL

LEC for the innovaton and antics

LPL for the absolute chaos and Raz

LCK for the competitive parity
To me, LCS has a mix of some of those values. The league used to be personality driven but with the rise in professionalism in franchising, it had to dissipate. All it leaves is basically long standing narratives per team. It's like KT's "Excitement" narrative. At least half the league's teams have something going for them which makes it a valuable interest for me.
I feel viewers are bored by the league however because

It tries to be too professional and intentionally and visibly zany. There's just limited open creativity and it feels more of forced at times.

The "winners" complex. NA is basically labeled as losers in the international light. Always the butt of jokes, usually the first to meme. Fans will flock to the one hopeful and once that hopeful fails, the whole region fails. You really don't get that feeling anywhere else except the LMS. Edit: Think of how bottom barrel matchups are perceived in each region. I still remember cases like ROC vs OG being a dumpster fire but it's silly these days when it comes up but something like DIG vs REN is used as an insult to the region for being the same dumpster fire. How's that fair?
Just negate those two points and just enjoying competition for its sake (and the narratives of a few teams) is probably enough to enjoy LCS in my opinion.
