If lux starts to ult, and tahm eats her, she will ult from his tummy.
Eating (W) should be similar to a stun in this case where it stops the spell from taking place.
This is on patch 5.22

Im pretty sure lux and ezreals ults are special channels that cannot be interrupted:
"Cast times cannot be interrupted by crowd control effects. During the cast time, Lux will ignore crowd control effects but still suffers from them if the duration persists.
If Lux is displaced by a knockback or pull effect during the cast time, the laser will fire from the original point of casting. There is a small area in front of Lux's character model which will still deal damage after being displaced. The rest of the laser however will damage from the original point."
From the wiki, so its probably working as intended.
It would be, if it was a channel. Lux ult and Ezreal ult can't be interupted. Ezreal's might, but the window is really small if it can be.
Lux's ult isn't stopped by stuns, either. Once she presses R, nothing but death can stop her from Death Starring your whole team. Her ult has a cast time, but it's not a channel, and so can't be interrupted.
not a bug, its a cast animation not the cast time. Ezreals Ult works the same way
